I've really been into smoothies lately and I've been meaning to make this one and share it with you guys on the blog, forever! Mmmm, chocolate and peanut butter, is there anything better?! This concoction was seriously amazing... I even had to wrestle it out of Martin's hands to get a sip. ;) I especially love that this recipe is super healthy as well as sugar free. I'm all about indulging but I still want to stay healthy while doing it and this smoothie did just that. It gave me great energy + I really enjoyed adding the coco too - it's full of antioxidants and flavonoids. Yay, for guilt free treats!
You'll need:
- 1/2 cup vanilla soy milk
- 2 tbsp unsweetened coco (I use a premium dutch brand)
- 2 tbsp creamy peanut butter
- 1 frozen and sliced banana
- 1/4 cup greek yogart
Pop all your ingredients in a blender... blend & enjoy!! Let me know what you think... :)
Oh my goodness. I've been eating way too many of these the past few weeks. So, so good! Lately, I've really been enjoying adding almond butter to my meals; it's loaded with vitamins + minerals, and unlike peanut butter it's low in carbohydrates, which I prefer. My favourite brand is MaraNatha and I buy their natural raw one. I seriously can't get over how tasty this grilled cheese sandwich is... I'll definitley be making it again this weekend (my hubby is in for a treat), and if you guys try it, be sure to let me know!
You'll need:
- 2 slices of your favourite bread (mine is a brown rice & gluten free one)
- Butter
- Apple, cored & sliced
- Almond Butter
- Sliced Swiss Cheese
- Cinnamon
Heat butter in a skillet over medium heat. Spread butter evenly over one side of each bread slice. Then spread your almond butter + add cheese & apples to the unbuttered side of your bread. Sprinkle cinnamon over the apples and top with your other bread slice, with the buttered side facing outward. Cook sandwich on both sides, 2 to 3 minutes per side or until golden brown. Mmmm. Enjoy!
I'm excited to finally be posting my first recipe. Gosh, I blabbed on about it for long enough, right?! When it comes to cooking, I'm a huge fan of simple & healthy + I love eating as much homemade food as possible. I generally try to avoid anything that's processed or comes from a can, and I stick to buying organic too. So... with the cooler (more like freezing!) temperatures in the air, I've been living off of yummy soups, and this one is my absolute favourite...
You'll need:- 2 tsp olive oil
- 3 cloves of garlic, peeled
- 1 small onion, finely chopped
- 2 tsp cumin
- 2 tbsp curry powder
- 1 tsp ginger
- 3 cups of baby carrots
- 3 sweet potatoes, peeled & cut into 1 inch pieces
- 3 1/2 cups organic vegetable broth
Heat oil in a large pot and saute onion + garlic. Add cumin, ginger and curry powder. Cook for 1 minute. Then add carrots, sweet potatoes and vegetable broth (sometimes I'll add 1/4 cup of coconut milk too). Bring to a boil, cover and simmer for 20 minutes or until your veggies are tender.
Once cooled, transfer to a blender & blend until smooth, then just heat and eat. Add salt & pepper to taste. So delicous!
